Slow Cooker Beef and Broccoli

Some people say slow cookers are only for winter meals, but we know better. Easy dinners that practically cook themselves, like slow cooker beef and broccoli, are perfect year-round. Tender slices of beef simmer in a rich, savory sauce before fresh broccoli joins the mix for a flavorful meal that tastes even better than takeout. With minimal prep work, this dish works for busy weeknights and days when you just don’t feel like turning on the oven.

How Do You Make Slow Cooker Beef and Broccoli?

To make slow cooker beef and broccoli, combine sliced beef with beef broth, soy sauce, brown sugar, garlic, and seasonings in a slow cooker. Cook until the beef becomes tender, then stir in broccoli during the final 30 minutes of cooking. Finish with a cornstarch slurry and serve over rice.

Ingredients

  • 2 pounds flank steak or sirloin, thinly sliced
  • 1 cup beef broth
  • 1 cup low-sodium soy sauce
  • 1/3 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 4 cups broccoli florets
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • Cooked white rice for serving
  • Sesame seeds and sliced green onions for garnish (optional)

Directions

1. Make the Sauce
Whisk together the beef broth, soy sauce, brown sugar, garlic, sesame oil, and ginger in a bowl.

2. Layer the Slow Cooker
Place the sliced beef in the bottom of the slow cooker. Pour the sauce over the beef and stir to coat evenly.

3. Cook Low and Slow
Cover and cook on HIGH for 4-5 hours or on LOW for 7-8 hours until the beef is tender.

4. Add the Slurry and Broccoli
Mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the slow cooker. Add the broccoli florets and stir gently.

5. Finish and Serve
Cover the slow cooker and cook for 20-30 minutes, until the broccoli reaches your preferred tenderness. Garnish with sesame seeds and green onions and serve hot.
