Cheddar-Stuffed Cheeseburgers

May 21, 2026 by The Butcher Shop

Nothing says Memorial Day weekend like burgers on the grill. You can’t go wrong with a classic burger, but these cheddar-stuffed cheeseburgers are a fun way to put a fresh spin on it. Juicy ground beef surrounds a molten cheddar center for a burger that feels special enough for a holiday weekend.

We’ve found that using freshly ground 80/20 beef delivers the perfect balance of flavor and tenderness. The higher fat content keeps the burgers juicy while the cheddar melts beautifully in the center. We also recommend chilling the stuffed patties before putting them on the grill. This step helps them hold their shape and keeps the cheese from escaping onto the grill grates.

Top these cheddar-stuffed cheeseburgers with lettuce, tomato, grilled onions, crispy bacon, or your favorite barbecue sauce, and serve with your favorite summer sides for an easy Memorial Day spread your neighbors and guests will talk about all summer long.

How Do You Make Cheddar Stuffed Cheeseburgers?

To make cheddar-stuffed cheeseburgers, divide seasoned ground beef into thin patties, place cubes of cheddar cheese in the center, and seal the edges tightly before grilling. Cook the burgers over medium-high heat until the beef develops a flavorful crust and the cheddar melts inside.

Prep time: 20 mins
Cook time: 12 mins
Total time: 32 mins
Servings: 4 burgers

Ingredients

  • 2 pounds 80/20 ground beef
  • 6 ounces sharp cheddar cheese, cut into small cubes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 brioche burger buns
  • Lettuce, tomato, sliced onion, and pickles for serving
  • Your favorite burger sauce or barbecue sauce

Directions

1. Prep the Grill
Preheat the grill to medium-high heat and lightly oil the grates.

2. Make the Patties
Combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper in a large bowl. Mix gently until combined. Divide the beef mixture into 8 equal portions. Flatten each portion into a thin patty. Place several cubes of cheddar cheese in the center of 4 patties. Top each with another patty and pinch the edges tightly to seal completely. Chill the stuffed patties for 10 minutes.

3. Grill the Burgers
Place the patties on the preheated grill, and grill the burgers for 5 to 6 minutes per side until the beef reaches your preferred doneness and the cheese melts inside.

4. Assemble & Serve
Place the cooked patties on the brioche buns. Serve with lettuce, tomato, onion, pickles, and your favorite sauces.

Butcher’s Tips for Success

  • Avoid cooking at high heat: Medium-high heat gives the beef enough time to cook evenly while the cheese completely melts inside the patty.
  • Spice it up: Swap the sharp cheddar for pepper jack for a spicy twist. Add sliced jalapeños for even more heat.
  • Make Stuffed Sliders: Turn this recipe into bite-sized sliders for Memorial Day cookouts. Smaller burgers cook quickly and give guests a chance to sample different toppings and sauces.

Frequently Asked Questions

Can I make cheddar-stuffed cheeseburgers ahead of time?

Yes. You can prepare the stuffed burger patties up to one day ahead and keep them covered in the refrigerator until ready to grill.

Do I have to use cheddar for stuffed burgers?

Sharp cheddar melts beautifully and adds bold flavor, but pepper jack, smoked gouda, or mozzarella also work well.

How do I keep the cheese from leaking out?

Seal the edges of the burgers tightly and avoid pressing down on them while they cook.
