Classic Reuben Sandwich

Corned beef and cabbage may be the star of St. Patrick’s Day, but the leftovers are just waiting in the wings. At The Butcher Shop, we know that high-quality, brine-cured brisket is the gift that keeps on giving – especially when you turn it into a classic Reuben sandwich.

There’s a reason the Reuben has a permanent spot on every great deli menu. It’s the perfect balance of rich, salty beef, tangy sauerkraut and dressing, and gooey Swiss cheese all on perfectly grilled rye bread. The secret to a deli-level Reuben at home is in the crunch-to-melt ratio. Here’s how we do it.

Recipe for Classic Reuben Sandwich

Ingredients:

  • 4-6 oz leftover TBS corned beef, sliced thin
  • 2 slices marbled or seeded rye bread
  • 2 slices Swiss cheese
  • ½ cup sauerkraut, squeezed dry
  • 2 tbsp Russian or Thousand Island dressing
  • 1 tbsp butter

Directions:

1. Prep the Beef
Put the sliced corned beef in a skillet over medium heat. Add a tiny splash of water or beef stock. Cover the skillet and steam the beef for 60 seconds.

2. Assemble the Sandwich
Butter the outside of both slices of rye bread. Spread a generous layer of dressing on the other side of the bread slices. Top with a slice of Swiss cheese, the warm corned beef, sauerkraut, and the second slice of Swiss.

3. Cook the Sandwich
Place the sandwich in a heavy skillet over medium-low heat. Use a spatula to press it down slightly for an even, golden-brown crust. Flip once the first side is browned. When the cheese oozes and the second side is browned, remove from the heat. Serve warm.
