Meatloaf is a common family dinner, but our meat and spinach loaf kicks it up a notch. Spinach is a healthy addition to this dish, and blending a few of the ingredients gives it a silkier texture with a rich taste. Our spinach meatloaf calls for ground beef, but you can substitute pork, turkey, or veal if you prefer. This dish pairs well with roasted or mashed potatoes, zucchini, or green beans.
Ingredients:
- 1 ¼ pound TBS ground beef
- 1 pound loose, fresh spinach
- ½ cup breadcrumbs
- ¼ teaspoon nutmeg
- ½ cup coarsely chopped celery
- ½ cup finely chopped onion
- 2 large eggs, lightly beaten
- 3 slices bacon
- ½ cup loosely packed flat-leaf parsley leaves
- ¼ cup whole milk
- 1 clove of garlic, minced
- 1 tablespoon unsalted butter
- 1 ½ teaspoon ground pepper
- ½ teaspoon salt
- Catsup, optional for serving
How to make spinach meatloaf:
- Preheat the oven to 350 F.
- Clean the spinach under cold water, drain, and place in a saucepan with a cover. Do not dry the spinach as the water will help it to cook. Cook on medium-low heat for about 2 minutes, stirring twice, until the spinach has wilted.
- Transfer the spinach to a colander and hold it under the cold water tap to chill and blanch the spinach. Drain the spinach well, squeezing it to extract most of the moisture. Use a knife and cutting board to chop it up.
- Add the ground beef to a large mixing bowl with spinach, breadcrumbs, salt, pepper, and nutmeg. Use your hands to mix the ingredients together.
- Place the celery, parsley, and milk in a blender. Blend well and then pour it into the mixing bowl.
- Add the garlic to the mixing bowl.
- Melt the butter in a small skillet. Add the onion to the melted butter and cook until the onion becomes translucent. Pour contents into the mixing bowl.
- Add the eggs to the mixing bowl. Blend all the contents together well with your hands.
- Place the mixture into a loaf pan, and cover it with the strips of bacon.
- Bake for 1 to 1 ¼ hour until cooked through, turning the pan 180 degrees halfway through.
- Pour off excess fat and allow the loaf to rest for at least 20 minutes.
- Serve with optional catsup.
