Italian Sausage and Potato Soup. Making soup in the Instant Pot or other similar pressure cooker is an easy way to put together a wholesome meal in minutes. Some people refer to this type of soup as Zuppa Toscana meaning “Tuscan soup,” but the actual Italian name is “minestra di pane,” meaning bread soup. Italian sausage, potatoes, onion, and kale are almost always core ingredients. Depending on the chef, you may also find this soup containing zucchini, cannellini beans, celery, and carrots.
Italian Sausage and Potato Soup Ingredients
- 1 pound TBS Italian ground sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 4 cups yellow potatoes, diced
- 1 15-ounce can cannellini beans, drained and rinsed
- 32 ounces vegetable broth
- ½ teaspoon oregano
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ½ cup heavy cream
- 2 cups chopped kale
Italian Sausage and Potato Soup Directions
- Turn the Instant Pot on “saute.” Once it is hot, add the olive oil and brown the sausage until no pink remains (about 3 minutes.)
- Add in the onion and saute with the meat until it becomes translucent. Add the garlic and saute for another 2-3 minutes. Make sure to scrape any burnt bits from the bottom of the pan.
- Add the potatoes, beans, broth, oregano, salt, and pepper. Stir to mix.
- Apply the lid and make sure the seal is in the right direction for cooking. Set the time to pressure cook on high for 10 minutes.
- When the cooker is done, perform a quick release.
- Add the kale and stir well. Finally, pour in the heavy cream and stir.
- Serve with freshly baked bread.
