Cooking grilled lamb cutlets might seem intimidating because it is one of the less common meats used in American cooking, but it is actually quite simple. Using a few tips, you can create a lamb-based meal that is tender and mouth-watering.
What is lamb meat?
Lamb meat is sourced from younger sheep–typically those under a year of age. The younger age of the meat means it is tender and moist. Also, domestic sheep are usually grass-fed, resulting in higher fat content and a delicate flavor. A 100-gram serving of lamb contains approximately 26 grams of protein, 16 grams of fat, and 258 calories. Since lamb is high in B12, some people find it helps improve nerve health and boosts the immune system.
Start with a rack of lamb.
The easiest way to cook lamb is starting with a fully prepared rack of lamb. Preparing a rack of lamb isn’t tricky, but it can be time-consuming. Almost all of the fat must be trimmed away from the rib rack, and then the thinner side of the rib meat must be cleared away from the bone. Without proper trimming, sections of meat will burn or cook unevenly. By calling ahead to The Butcher Shop, our team can prepare a rack of lamb for you.

- First, determine how much lamb you need. Each rib section is a “cutlet.” One dinner serving usually consists of 3 cutlets.
- Next, cut your rack of lamb into cutlets. If your meat has been refrigerated, it’s best to allow it to warm up to room temperature before cooking.
- Heat a griddle pan over high heat and wait for it to become very hot. While it’s heating, brush the cutlets with vegetable oil and season them with salt and pepper. Sprinkle with a little freshly chopped rosemary.
- Place the cutlets on the grill and allow them to cook for about 3-4 minutes on each side, depending on the meat’s thickness. The result should be a golden brown color on the outside and a pink interior. If you prefer your meat well done, simply cook it a little longer. Don’t overcook the meat, though, as it will become tough.
- Remove the meat from the griddle and allow it to rest for at least 5 minutes before serving.
