Because the meat itself is so delicious, we recommend that you don’t overpower it with too much seasoning. And, there is no need to marinate a standing rib roast. This is a tender cut of beef that really only requires salt, pepper, and an herb of your choice.
How Much Will You Need?
A full prime rib roast cut generally has 7 ribs. Each rib section can generally serve 2 people. Here is a good guideline for planning your rib roast meal.
- 1.5 pounds for 2 people
- 3 pounds for 4 people
- 4.5 pounds for 6 people
- 6 pounds for 8 people
- 7.5 pounds for 10 people
- 9 pounds for 12 people

Roasted Prime Rib Recipe
Prep time: 10 minutes
Cook time: approximately 2 hours
Yield: 12 servings
Ingredients:
- 1 full standing rib roast, approximately 9 pounds
- 2 tablespoons extra virgin olive oil
- 1 tablespoon coarse sea salt or kosher salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon dried thyme or rosemary leaves
Directions:
1. Take the roast out of your refrigerator 30 minutes prior to roasting to allow it to come to room temperature.
2. Preheat your oven to 450°F.
3. In a small bowl, mix together the olive oil, salt, pepper, and herb of choice. Rub the entire roast with the oil and seasoning mixture. Place the beef on a rack inside a roasting pan, fat side up.
4. Roast for 30 minutes at 450°F. Reduce the oven temperature to 350°F and continue to cook for approximately 1-1/2 hours or until the internal temperature reaches 115°F for medium rare when checked with a digital meat thermometer. This is approximately 15 minutes per pound. For more well done meat, cook to an internal temperature of 125°F.
5. Remove the roast from the oven to a clean cutting board. Tent with foil and allow the meat to rest for at least 20 minutes before slicing.
6. Slice between the ribs. You can serve the whole rib sections with the bone-in for an impressive presentation. Or, remove the rib bones and slice the roast against the grain. Place the meat on a serving platter and spoon over some of the pan juices.
7. Serve while warm with Yorkshire pudding and roasted root vegetables.
