Summer months mean wild salmon is in season!
While you can find fresh salmon all year long at the Butcher Shop summer is a great time to enjoy fresh fish and baked salmon with olive sauce. If you’ve never cooked fresh fish before, it can seem daunting; yet in reality, baking a delicious salmon dinner is easy enough for even the most novice cooks.
Ingredients:
Sauce:
- 2 cloves garlic, chopped
- 1 shallot, chopped
- 1 cup dry white wine
- ½ cup chicken stock
- ⅓ cup green olives, chopped. Castelvetrano or Picholine is recommended.
- 1 cup heavy whipping cream
- 2 teaspoons fresh thyme, chopped
- Salt and pepper to taste
Salmon:
- About 3 pounds of fresh, TBS salmon, boned and skinned.
- 1 tablespoon butter
- ½ cup dry white wine
- 1 tablespoon fresh tarragon, chopped
- Salt and pepper to taste
Directions For Baked Salmon with Olive Sauce:
Preheat your oven to 400F
- Prepare a greased baking sheet and set it aside.
- Prepare the sauce. Add the garlic, shallot, and white wine to a saucepan over high heat. Reduce to about ¼ cup of liquid (5 to 6 min). Add the chicken stock and reduce to about ½ cup of liquid (4 min). Add the olives, cream, and thyme. Cook until the sauce thickens (about 5 min). Season with salt and pepper to taste. Set aside.
- Bake the salmon. Place the side of salmon on the baking sheet. Add dabs of butter onto the salmon and drizzle with the white wine. Sprinkle tarragon over the fish. Bake until cooked through but be careful not to overbake it (about 12 min).
- Serve your dinner! Place the baked salmon onto a serving platter or cut into individual pieces and serve on dinner plates. Drizzle the sauce over the fish. Garnish with extra sprigs of thyme if desired. Serve with extra sauce on the side.
