March 25, 2021 by The Butcher Shop

Choose Fast or Slow for Scrumptious BBQ Pulled Chicken Sandwiches

Hectic schedules can make getting dinner on the table challenging, while other days the smell of dinner simmering all day in the slow cooker can warm your soul.  This simple recipe will fit the bill in either situation.  In fact, this BBQ pulled chicken sandwich is so easy kids can make it!

Ingredients:

  • 2 pounds TBS boneless, skinless chicken breast BBQ Pulled Chicken Sandwiches
  • ½ cup water (for Instant Pot only)
  • 2 tsp. garlic powder
  • 1 cup barbeque sauce (choose your favorite)
  • ¼ cup Italian salad dressing
  • ½ cup dark brown sugar
  • ⅛ black pepper
  • ½ tsp. salt
  • 1 tsp. paprika

Other needs:

  • Potato buns
  • Coleslaw (either premade or its simple to make your own with shredded cabbage and coleslaw dressing.)

FAST – Directions for Instant Pot BBQ Pulled Chicken Sandwiches :

  1. Add the metal trivet and the water to the bottom of the pot.
  2. Place the chicken onto the metal trivet.
  3. Mix the garlic powder, barbeque sauce, Italian dressing, salt, pepper, brown sugar, and paprika together in a bowl and whisk until blended.
  4. Pour mixture over the chicken breasts.
  5. Pressure cook on regular for 9 minutes.
  6. When done, allow pressure to release naturally for at least 5 minutes and then quick release.
  7. Place chicken in a large mixing bowl and pull apart using two forks. Once shredded, scoop in some of the sauce from the Instant Pot until the meat is moderately saturated and juicy.
  8. Scoop onto potato buns, add additional barbeque sauce if desired, and top meat with coleslaw.

SLOW – Directions for Crock-Pot BBQ Pulled Chicken Sandwiches:

  1. Mix the garlic powder, barbeque sauce, Italian dressing, salt, pepper, brown sugar, and paprika together in a bowl and whisk until blended.
  2. Add the chicken to the Crock-Pot and cover with the mixture.
  3. Cover and cook on high for 4 hours or low for 6 hours.
  4. Place chicken in a large mixing bowl and pull apart using two forks. Once shredded, scoop in some of the sauce from the Crock-Pot until the meat is moderately saturated and juicy.
  5. Scoop onto potato buns, add additional barbeque sauce if desired, and top meat with coleslaw.

Enjoy your BBQ pulled chicken sandwich with homemade French fries or baked beans.
