Grilled Pork Tenderloin with Cherry Salsa

Marinade for Pork:
- ½ cup cilantro, coarsely chopped
- ¼ cup shallots, minced
- 4 cloves garlic, minced
- 1 jalapeno, minced
- 2 tbsp. olive oil
- 1 tbsp. lime juice
- Salt and pepper, to taste
Cherry Salsa Ingredients:
- 3 cups cherries, pitted and halved
- ¼ cup cilantro, finely chopped
- 1 jalapeno, minced
- 1 shallot, minced
- 3 garlic cloves, minced
- 1 tbsp. sriracha sauce
- Salt and pepper to taste
How to Prepare and Cook the Grilled Pork Tenderloin
1. Put the pork tenderloins in a seal-able plastic bag. Chop the cilantro. Mince the shallots, garlic, and jalapeno. Add the cilantro, shallots, garlic, jalapeno, olive oil, lemon juice, salt and pepper to the pork. Seal the bag tightly. Shake and turn the bag to coat the pork entirely.
2. Place the bag in the refrigerator and allow the pork to marinate for at least 1 hour.
3. While your pork is marinating, prepare the salsa. Wash the cherries. Remove the stems, pit and cut the cherries in half. Finely chop the cilantro. Mince the jalapeno, shallot and garlic cloves. Mix everything together. Add the sriracha sauce. Add salt and pepper to your desired taste. Mix thoroughly once more. Refrigerate the Cherry Salsa for at least 30 minutes to allow the flavors to meld together.
4. Preheat your grill to medium-high heat. Grill the pork tenderloins on the grill for 7 minutes on one side with the grill lid closed. Turn the pork tenderloins, close the lid and cook on the other side for 6 minutes. Turn off your grill and leave the lid closed. Your pork will continue to cook. After 5 minutes, test your pork with a meat thermometer to make sure the internal temperature has reached 145 degrees Fahrenheit.
5. Remove the pork from the grill. Place the pork on a plate and cover it with aluminum foil. Allow the pork to rest for 10 minutes.
6. Cut the pork into thin slices and arrange them on your serving platter. Spread the salsa over the grilled pork.
