What You’ll Need For Grilled Corn
Four fresh ears of corn on the cob – shucked
1 1/2 c. sour cream
1/2 c. mayo
1/4 c. cilantro leaves – freshly chopped
1 c. grated Parmesan
Juice of 1 lime
Salt, pepper, and red chili powder – to taste.
Preparation Instructions
Leaving the core attached to the corn stalk, shuck all husks and silk from the cob.
Combine mayo, sour cream, and cilantro in a bowl, mixing well.
Grill corn until slightly charred using a cast iron griddle pan or a hot grill.
While cooking, turn corn regularly, cooking evenly. Once the corn cooks and is slightly charred (but not burned) use a condiment brush to coat the corn with the mayonnaise and sour cream mix. Then sprinkle with parmesan cheese, chili powder, and other preferred seasonings.
