Holiday Feast and the Family

prime rib at TBSThe holidays are a time for the family to unplug and come together at the dinner table for good food, great conversation and fun times. Catching up with family and friends is easy when you gather around tasty food. It seems food is the big conversation piece when people get together! That’s why your holiday spread this year should be out of this world, for a feast everyone will be talking about for years to come.

Garlic Prime Rib Roast

Garlic lovers, rejoice! Try this tasty and tender garlic prime rib roast to complement the centerpiece of your holiday table.

Ingredients:

  • 1 prime rib roast (10 lbs)
  • 10 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp thyme

Directions:

Preheat the oven to 500 degrees F, then put the prime rib in a roasting pan, fatty side up. Mix the garlic, olive oil, salt, pepper and thyme in a small bowl, then spread the mixture over the roast. Leave the roast to sit for about an hour to soak in the mixture. Place in the oven and bake for 20 minutes, at which time you should reduce the temp to 325 degrees F. Let it cook for another hour to an hour and half, or until the internal temperature says 135 degrees F. This will yield you a medium rare roast, just how it should be. Take the roast out of the oven and let it stew in its own juices for 15 minutes before carving and serving.

Serve with garlic mashed potatoes to round out the meal.

Ingredients:

  • 8 red potatoes, quartered
  • 3 peeled garlic cloves
  • 2 tbsp butter
  • 1/2 cup warm milk
  • 1/2 tsp salt
  • 1/4 cup grated Parmesan cheese

Directions:

Put potatoes and garlic in saucepan and cover with water, bringing it to a boil. Once boiling, reduce heat to simmer and let sit for 20 minutes or until tender. Drain the water, then add in the butter, milk, salt and cheese. Serve warm. Enjoy the compliments you’ll get on such a coordinated meal for the family!
