1. Mashed Potato Quesadilla
You’ll need:
2 cups mashed potatoes
Crumbled bacon
1/4 cup sliced green onions
8 flour tortillas
2 cups shredded cheddar cheese
2 tbsp. softened butter
1 cup salsa
Sour cream as needed
Directions:
Combine the mashed potatoes, bacon, and green onions, then spread it onto one side of half of the tortillas. Sprinkle with cheese and place the other tortillas on top. Spread some butter over the quesadillas, then cook on a preheated pan until golden brown and crispy. Do this to both sides. Serve with salsa and sour cream on the side.
2. Turkey Potato Casserole
You’ll need:
1 pound cooked shredded turkey meat, shredded
1 chopped onion
1 can green beans
1 can cream of mushroom soup
8 oz. cubed cheddar cheese
8 oz shredded cheddar cheese
4 cups mashed potatoes
Directions:
Preheat oven to 350 degrees F. Spread out turkey on one layer on a 9×13 inch baking dish. Top with onion and green beans, then pour the condensed soup over all layers; sprinkle with shredded cheese. Blend the cubed cheese and mashed potatoes and spread over the casserole. Bake for a half hour to 40 minutes.
3. Cranberry Turkey Salad
You’ll need:
1 cup cranberries
1/2 cup orange juice
2 tbsp sugar
6 cups cooked turkey
Diced celery
3/4 cup mayo to taste
2 tbsp applesauce
Salt, sage, thyme, and pepper to taste
Directions:
Preheat oven to 325 degrees F, then line your baking pan with foil. Boil cranberries, orange juice, and sugar in a pan on the stovetop. Boil five minutes, then remove from heat. Mix the turkey with the remaining ingredients, then fold in the cranberry mixture. Chill for two hours before serving.
