Hearty Thanksgiving Stew
Ingredients:
- 2 tbsp butter
- 2 chopped onions
- 1 chopped red pepper
- 1 chopped celery stalk
- 2 sliced carrots
- 2 cubed potatoes
- 3 tbsp flour
- 3 cups chicken stock
- 1/4 tsp marjoram or seasoning of choice
- Salt and pepper to taste
- 2 cubed boneless turkey breast halves
Directions:
Turn heat on stove to medium, then heat up butter in a large pot. Throw in the onions; when tender, add in the celery and carrots. Stir in potatoes, flour, chicken stock and seasoning. Add turkey to the pot and put the heat up to boil. Once it bubbles, turn it down to low heat, cover the pot and simmer for a half hour. Mix pepper in and cook 10 minutes longer. Voila! You’ve got yourself a hearty, meaty stew everyone will enjoy. This recipe is extremely versatile, so if you want to make it with the leftovers you have from Thanksgiving dinner, that works too. Instead of adding in cubed potatoes you can serve this stew over left-over mashed potatoes, if you have any left. Either way, we have everything you need to make this recipe.
