Grilled Chinook Salmon with Lime Marinade
You’ll need just a few ingredients to make this marinade, great for any summer gathering around the grill. Combine 1/4 cup lime juice (preferably fresh squeezed), a tablespoon of olive oil, two teaspoons of Dijon mustard, 1/4 teaspoon each of ginger, garlic powder and cayenne, and 1/8 teaspoon pepper. Place four Chinook salmon steaks in a bowl of the marinade and let sit in the fridge for at least an hour. Place on a medium heat grill (brush it lightly with olive oil so it doesn’t stick) and leave on for about five to 10 minutes per side. Because Chinook salmon is so thick, it can be placed directly on the rack. If, however, you prefer to lock in those bold marinade flavors, you can place the salmon steaks in tin foil so they stew in their own juices. Cool and serve with corn on the cob, a bed of fresh greens, rice, succulent green beans or even potato salad for the perfect summer treat in the backyard.
