Nothing says summer like a good barbecue out in the backyard with friends and family. When you’re hosting a party, you don’t want to spend too much time prepping and grilling, so it’s important to keep it simple when it comes to a smokin’ hot ribs recipe all can enjoy. Spend more time jumping in the pool with the kids and less time sweating in the kitchen. Try out this easy recipe for succulent BBQ ribs.
Just because you don’t have an open pit or slow roaster doesn’t mean you have to sacrifice tender flavor. First, head to the butcher and pick up a few pounds of baby back ribs (or much more depending on your crowd). As a general rule, be sure to buy about a half pound of ribs per person for the meatier cuts such as with country style ribs. For leaner cuts, such as spare ribs, go with a full pound per person. Check with your butcher to see how much they recommend for the amount of guests you have attending the cookout. Your butcher can also help you choose the right cut for the type of recipe you’re going for. Also called loin ribs, baby back ribs form the shorter portion of the ribs and are meatier than other types.
You’re going to be using both a dry rub and a sauce for this recipe to bring out all the tenderness and flavor. Grab a bottle of your favorite barbecue sauce and a dry rub, preferably one with cayenne pepper in it for a little kick. In terms of the barbecue sauce, try to avoid the ones that have a tomato base, as these tend to burn more quickly. One with molasses for a smooth texture and chili pepper for a heated aftertaste is a perfect idea.
Sprinkle the dry rub on the baby back ribs, massaging it into the meat until it’s coated. Place on the grill over low heat — indirectly if you can — for at least an hour and half. That’s the fast method. You can go the slow route and let them grill for up to three hours. Brush on the sauce only during the last 20 minutes or so of grilling so as not to burn it. Let sit to cool just a bit, then serve with a side of corn, potato salad or baked beans. And don’t forget the bibs and napkins!
