Recipe for a Simple Pork Crown Roast
Ingredients:
- 1 pork crown roast (about 20 ribs)
- 4–6 tablespoons olive oil
- 8–10 cloves garlic, minced
- 2 tablespoons kosher salt
- 2 teaspoons black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 teaspoons paprika
- Optional: prepared stuffing to fill the center
Directions:
1. Prep the Roast
Pat the meat dry. In a small bowl, mix the olive oil, garlic, salt, pepper, rosemary, thyme, and paprika into a paste. Rub it generously all over the roast, including between the ribs.
2. Add Stuffing (Optional)
If you’re using stuffing, spoon it into the center of the crown. If not, leave the center empty and fill it later with roasted apples or decorative greens.
3. Roast Low and Slow
Preheat the oven to 375°F (190°C). Place the roast in a roasting pan and cook for 1.75 to 2.5 hours, depending on the size. You’re aiming for an internal temperature of 145°F in the thickest part of the meat.
4. Rest and Display
Let the roast rest for 15 minutes before slicing. Garnish with herbs, cranberries, citrus slices, or mini holiday décor.
