How to Perfectly Roast a Turkey Breast for Thanksgiving

November 13, 2025 by The Butcher Shop

At The Butcher Shop, we know not every Thanksgiving celebration calls for a whole turkey. Maybe you’re hosting a small gathering, or maybe you simply prefer white meat. Either way, roasting a turkey breast for Thanksgiving is the perfect solution. It cooks faster, is easier to handle, and it lets you focus more on sides and desserts – all while delivering the classic holiday flavor you love. With just a few ingredients and some thoughtful seasoning, you can create a tender, flavorful main dish for your holiday table.

Recipe for Roasted Thanksgiving Turkey Breast

Ingredients:

  • 1 whole bone-in or boneless turkey breast (4–6 pounds)
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup chicken or turkey broth
  • Optional flavor boosters: lemon zest, smoked paprika, brush of maple glaze near the end of roasting

Directions:

1. Preheat and Prep
Heat your oven to 375°F (190°C). Pat the turkey breast dry with paper towels to help the skin crisp.

2. Season Generously
Rub olive oil or butter all over the turkey breast. Combine the herbs, garlic powder, salt, and pepper. Massage the mixture into the meat and under the skin (if possible).

3. Roast
Place the breast skin-side up in a roasting pan or baking dish. Pour the broth into the bottom to keep things moist. Roast uncovered for 60–90 minutes, depending on size, until the internal temperature reaches 165°F (74°C).

4. Rest Before Carving
Remove the pan from the oven and tent the turkey breast loosely with foil. Let it rest for 15–20 minutes before slicing.

Tips & Variations

  • Keep it juicy: Brine the turkey breast overnight to keep it extra juicy.
  • Infuse more flavor: Mix herbs into the butter you slip under the skin.
  • Hands-off cooking: Season the turkey breast and place it in a slow cooker with a cup of broth. Cook on low for 6–7 hours, then broil for a few minutes to crisp the skin.
