Grilled Rosemary Pork Chops

Memorial Day weekend is the unofficial kickoff to summer, and there’s no better way to mark the occasion than by firing up the grill. While burgers and hot dogs get more than their fair share of time on the grates, why not elevate your spread with tender, juicy grilled rosemary pork chops? Infused with fresh herbs and smoky depth, these chops bring a touch of gourmet flair to your holiday weekend without the fuss.

Recipe for Grilled Rosemary Pork Chops

Ingredients:

  • 4 bone-in TBS pork chops (1 to 1.5 inches thick)
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste

Directions

1. Mix the Marinade
In a small bowl, whisk together the olive oil, garlic, rosemary, and lemon juice. Add salt and pepper to taste.

2. Marinate the Pork
Place the pork chops in a zip-top bag or a shallow dish. Pour the marinade over the chops, making sure they’re evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 6 hours for a deeper flavor.

3. Prepare the Chops
Preheat your grill to medium-high heat. Clean and oil the grates to prevent sticking. While your grill heats, remove the pork chops from the marinade and let them come to room temperature for even cooking.

4. Grill the Chops
Place the chops on the grates and cook for about 4-5 minutes per side, or until they reach an internal temperature of 145°F.

5. Rest the Chops
Remove the chops from the grill and let them rest for 5 minutes before serving.

Tips & Variations

  • Don’t overcook: Pork can dry out quickly, so use a thermometer to keep a close eye on the internal temperature.
  • Add a finishing touch: Try a drizzle of balsamic glaze or a pat of garlic herb butter just before serving.
