Recipe for Leftover Lamb Gyros
Ingredients:
For the Gyros:
- 2–3 cups leftover roasted TBS lamb, sliced thin or chopped
- 4 pita breads or flatbreads
- 1 cup chopped romaine or shredded lettuce
- 1 small red onion, thinly sliced
- 1 medium tomato, diced or sliced
- 1/2 cup cucumber slices or spears
- Feta cheese, crumbled (optional)
For the Tzatziki Sauce (or use store-bought):
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber (squeeze out moisture)
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill (or 1 tsp dried)
- Salt and pepper to taste
Instructions:
1. Make the Tzatziki
In a small bowl, combine the yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper. Mix well and refrigerate until ready to use.
2. Reheat the Lamb
Heat a skillet over medium heat with a splash of olive oil. Add the leftover lamb and cook until warmed and slightly crispy on the edges for extra texture.
3. Warm the Pita
Wrap the pitas in foil and warm them in the oven at 350°F for about 5–10 minutes, or wrap them in a wet paper towel and microwave for 15–20 seconds.
4. Assemble the Gyros
Layer each pita with lettuce, tomato, red onion, cucumber, and lamb. Add a generous dollop of tzatziki sauce and top with crumbled feta if using.
5. Wrap and Serve
Fold the pitas in half and serve warm. For a classic gyro experience, wrap them in parchment or foil for easy eating.
Tips and Variations
- Grain Bowl Option: Skip the pita and serve everything over rice or quinoa.
- Pickled Veggies: Add pickled red onions or banana peppers for a tangy kick.
- Make It Ahead: Tzatziki can be made a day in advance and kept in the fridge for 2–3 days.
