Ingredients for Garlic and Butter Roast Beef
- A 5-LB, 1/2-inch thick TBS boneless rib-eye roast, trimmed
- 2 heads of garlic (medium-sized), peeled
- 2 green onions, chopped
- 3 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh chives, chopped
- 6 canned anchovy fillets, drained
- 2 tablespoons of salt
- 4 teaspoons of black pepper
- 1 pound of unsalted butter, softened
- 6 cups beef broth
- 1 tablespoon of cornstarch
Directions:
- Use a food process to puree the garlic cloves in a paste. Add the green onions, rosemary, thyme, chives, anchovies, 1 tablespoon of salt, and 2 teaspoons of pepper and pulse about 5 times. Add the butter, and puree for one minute. Transfer half of the mixture to parchment paper and roll into the shape of a log. Refrigerate the butter roll for at least 1 to 2 hours. Allow the rest of the mixture to sit at room temperature.
- Place the rib roast onto a plastic cutting board. Season both sides evenly with 1 tablespoon of salt and 2 teaspoons of black pepper. Use a spatula to coat the room-temperature butter mixture evenly over the roast. Place the roast on a rack inside a roasting pan. Pour the beef broth into the roasting pan and allow it to sit at room temperature for one hour.
- Preheat the oven to 450°F.
- Roast the beef for 15 to 20 minutes until lightly browned. Do not open the oven door, but reduce the oven temperature to 325°F. Continue roasting at this lowered temperature until the thickest part of the roast reaches 130°F. This should take between an hour and a half to two hours.
- Transfer the roast to a cutting board and allow it to rest for 15 minutes.
- While the meat is resting, make gravy from the juices in the roasting pan. Pour the juices through a fine strainer into a medium saucepan. Bring the liquid to a simmer over low. Use a skimmer to remove fat from the liquid as it warms. Remove three tablespoons of the warmed broth into a small bowl and mix with the cornstarch until smooth. Then, put this mixture into the saucepan and whisk continually while it simmers. In about 5 minutes, the gravy should have thickened, and you can remove it from the heat.
- Slice the roast against the grain into 1-inch slices. Serve immediately plated with gravy and a 1/2 thick slice of the chilled butter mixture. If you’d like, sprinkle with more chives, flaky sea salt, and freshly ground pepper.
