It’s easy to make, and best of all, most of it can be prepped ahead of time–making it perfect for busy families on the go.
Ingredients for Grilled Chicken Greek Salad:
- 2 pounds TBS chicken breasts, sliced into strips
- 1 cup Greek yogurt
- The juice of 1 large lemon
- 4 tablespoons olive oil (plus extra as needed)
- 2 tablespoons red wine vinegar
- 3 garlic cloves minced
- Salt and pepper to taste
- 1 tablespoon dried oregano
- 1 teaspoon sweet paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Ingredients for the salad (choose from the salad fixing list below.)
Step 1: Make the dressing.
The dressing for this Greek salad is simple to prepare and can be done days ahead of time. Called “ladolemono,” it’s made from one part lemon juice and three parts olive oil. Simply whisk these ingredients together until emulsified. Add a little dried oregano, garlic, salt, and pepper for extra flavor, and you’re done! You can store the dressing in the refrigerator for up to two weeks.
Step 2: Marinate the chicken.
Prepare the marinade by combining the yogurt, olive oil, lemon juice, red wine vinegar, garlic, and spices. Toss in the chicken strips, make sure they are coated well in the marinade, cover with plastic wrap, and refrigerate for at least 30 minutes.
Step 3: Prepare the salad.
You can get as creative as you want with the ingredients for your Greek salad. Put your base salad together using your favorite salad fixings. Typical Greek salad ingredients include:
- Roma tomatoes, sliced. Other vine-ripe tomatoes or cherry tomatoes cut in half also work well.
- English cucumbers, peeled and sliced.
- Red onion, sliced thin.
- Kalamata olives, pitted.
- Bell peppers, sliced.
- Feta cheese, cubed.
- Iceberg lettuce.
Toss the salad in the prepared dressing.
Step 4: Grill your chicken.
Heat a deep skillet over medium with 2 tablespoons of olive oil. When the oil is hot, add the chicken strips. Grill on one side for 4 to 5 minutes until browned. Flip each piece and grill for another few minutes. The internal temperature of the chicken pieces should reach 165°F.
Step 5: Assemble the salad.
