St. Patrick’s Day is coming up in March, and a traditional favorite meal is corned beef and cabbage. You can prepare this meal at home with very little work and using only your Instant Pot (or similar pressure cooker.) In fact, this is another great recipe to get the kids involved with to learn how to cook and make healthy meals on their own. With a few simple steps, your friends will turn green with envy when they learn how easy it was for you to prepare a St. Patrick’s Day holiday feast.
The history of corned beef and cabbage:
You may be surprised to learn that the Irish didn’t eat corned beef for St. Patrick’s Day. If you traveled back in time to Ireland, you’d be sitting down to a meal of pork bacon and cabbage instead. Yet, when Irish immigrants came to America, pork bacon was not as easy to obtain or very affordable. They noticed that corned beef sold at local delis had a similar flavor, and thus, using corned beef as the centerpiece for their Irish meal became the norm.
Ingredients for Corned Beef and Cabbage:
- 2 pounds TBS corned beef
- 1 medium yellow onion, quartered
- 2 tablespoons of minced garlic
- 3 bay leaves
- 4 cups water
- 6 carrots, cut into 2 inch pieces
- 4 red potatoes, quartered
- 1 head of cabbage, cut into 8 wedges
Ingredients for seasoning:
Sometimes corned beef will come with a packet of prepared seasonings, or you can buy a mix from the store. However, its easy to make the seasoning for corned beef with these ingredients:
- 1 teaspoon of yellow mustard seeds
- 1 teaspoon of whole black peppercorns
- 1 teaspoon of coriander seeds
- 1/2 teaspoon of whole allspice
- 3 whole cloves
Directions:
- Place the corned beef, onion, garlic, bay leaves, seasoning, and water in the pressure cooker.
- Seal the pressure cooker and set to 70 minutes on high pressure.
- After it has completed cooking, allow it to naturally release pressure for 15 minutes. Quick release any remaining pressure and open the pot.
- Pull out the corned beef and set it in a baking dish with one cup of the liquid from the pot.
- Leave the remaining liquid in the pot and add the vegetables: carrots, potatoes, and cabbage.
- Seal the pot and set to 3 minutes on high pressure.
- After it has completed cooking, perform a quick release and open the pot.
- Take out the cabbage and cut to serving size pieces.
- Slice and serve the corned beef with a generous portion of cabbage, carrots, and potatoes.
