After weeks of hearty meals filled with roast beef, baked hams, and turkey, are you beginning to crave something a bit more casual? How about a good home-cooked burger? There’s no reason to settle for a boring burger with traditional toppings like lettuce and tomato. With minimal effort, you and your family can enjoy mouth-watering mushroom-stuffed burgers with your favorite beverages and sides.
Ingredients for Mushroom-Stuffed Burgers:
- 2 pounds of TBS ground beef (85/15 works best)
- 1/2 cup sweet onion, finely chopped
- 2 medium eggs (beaten slightly)
- 1 cup soft breadcrumbs
- 1/4 cup ketchup
- 1/2 teaspoon salt
- 1/8 teaspoon ground pepper
- 3 tablespoons olive oil
- 8 ounces of sliced mushrooms
- 6 slices of your favorite burger cheese
- 6 hamburger buns
Directions:
1. Mix the ground beef, onion, eggs, breadcrumbs, ketchup, salt, and pepper in a large bowl.
2. Divide the mixture into 12 even portions. Roll each portion into a ball, flatten to about 1/4 inch thick, and set aside on wax paper.
3. In a skillet, saute the mushrooms in the olive oil over medium heat until soft.
4. Scoop the mushroom onto 6 of the patties in equal amounts. Cover each pattie with one of the plain ones and pinch the edges to seal the pocket of mushrooms in the center.
5. Now, all you have to do is cook your burgers! Broil or grill the burgers to your desired level of done-ness. The consensus is your ground beef should be heated to 160° F. Use a digital thermometer in the thickest portion of the meat (not the mushroom center) to evaluate the internal temperature.
6. Top your mushroom-stuffed burgers with cheese and serve with hamburger buns.
