Putting together a spinach and ham frittata is the perfect choice when you want a wholesome breakfast, but don’t want to get up early and spend hours in the kitchen. The recipe is easy enough for kids to get involved in the preparation, too. Serve with your favorite morning sides like fresh fruit or hashbrowns. Ingredients for spinach and ham frittata:
- 1 cup TBS ham, diced
- 2 tablespoons olive oil
- 2 cups fresh baby spinach
- 3 cloves garlic, minced
- 1/2 cup cheddar cheese
- 1/2 cup Monterey jack cheese
- 1 dozen large eggs
- 1/4 cup half and half
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- Optional toppings: your favorite salsa, hot sauces, chopped fresh chives, etc.
Directions:

Preheat oven to 425°F.

Whisk together the eggs, half and half, salt, and pepper in a large mixing bowl. Set aside.
- Drizzle the olive oil into a 12-inch oven-safe skillet over medium heat. Add the garlic and spinach. Cook for about two minutes until the spinach is wilted. Add the ham and cheeses to the skillet.
- Carefully add the egg mixture to the skillet and stir gently to mix throughout. Continue to cook on the stove for about a minute until the edges just begin to set.
- Place the skillet into the oven. Bake for 9 to 14 minutes until the eggs are cooked through.
- Remove from the oven and allow the frittata to cool for 5 minutes.
- Slice and serve.

- Get creative with your ingredients! You can add many leftovers to your frittata including mushrooms, green beans, diced tomatoes, brocolli, and potatoes. Add-ins should be pre-cooked before adding them to the frittata.
- Don’t use low-fat dairy alternatives instead of half-and-half. The dairy ingredient is what will give your frittata the right consistency and texture. You can, however, substitute whole milk or heavy cream instead of half-and-half.
- You can store your leftover spinach and ham frittata in the refrigerator in a tightly sealed container for up to two days. It’s easy to reheat the frittata either in a toaster oven or microwave.
