This recipe for leftover turkey tetrazzini is simple to prepare and will help keep your family from getting tired of the delicious Thanksgiving bird you prepared for the holiday.
What you need to make leftover turkey tetrazzini:
- 1 package spiral macaroni
- 2 cups leftover TBS turkey, cubed
- 8 ounces fresh mushrooms, sliced
- 1 medium sweet onion, chopped
- 3 tablespoons unsalted butter
- ½ cup frozen peas
- 1 10.75-ounce can of condensed cream of mushroom soup, undiluted
- 1 cup milk (2% works best)
- ½ teaspoon poultry seasoning
- ⅛ teaspoon ground mustard
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 tablespoon fresh parmesan cheese, grated
Directions:
- Preheat the oven to 350°F.
- Prepare the pasta according to the directions on the box. If you prefer another type of pasta like shells or spaghetti, it will work just as well. Once your pasta has cooked, drain it and place the pasta into a 11X7-inch deep baking dish.
- Make a layer on top of the pasta with the diced turkey. Set aside.
- In a large skillet over medium heat, saute the mushrooms and onion in the butter until the mushrooms become tender and the onions begin to turn translucent. Mix in the frozen peas.
- While the mushrooms and onions are cooking, use a large bowl and whisk the soup, milk, poultry seasoning, and mustard until well blended. Add the mixture to the mushrooms, onions, and peas. Add the cheddar cheese and cook over medium heat until melted.
- Pour the mixture over the turkey in the baking dish.
- Layer the mozzarella cheese over the top, and sprinkle the parmesan cheese evenly as the final layer.
- Bake the casserole uncovered for 25 to 30 minutes until heated through.
- Remove from the oven and allow to cool for 10-15 minutes before serving.
