Does it feel like you’re busier during the fall months than in any other part of the year? There’s something about kids returning to school, fall sports schedules starting again, and figuring out Halloween costume ideas that make autumn days fly by. This is the perfect time to prepare a casserole, and this one for Mexican beef lasagna doesn’t even require an oven. You can even get your kids involved in preparing this recipe. Feel free to change up the ingredients to match your preferences, too.
Ingredients:
- 1 pound TBS ground beef (80% works best, but leaner is fine, too)
- 1 sweet onion, chopped
- 2 tablespoons olive oil
- 1 15-ounce can of black beans, rinsed and drained
- 1 cup Picante salsa
- ½ teaspoon chili powder
- 1 10.5-ounce can cream of chicken soup, undiluted
- 1 10-ounce can Rotel tomatoes with green chiles
- 1 4-ounce can diced green chiles
- 1 cup frozen sweet corn, thawed and drained
- 1 bag of Doritos nacho-flavored tortilla chips (or similar corn chip), crushed
- 2 cups of Mexican shredded cheese mix (cheddar and jack cheese)
- 2 avocados, cubed
- Sour cream
Directions for Mexican Beef Lasagna:
- Saute the onion in the olive oil until the onions begin to soften. Add the ground beef to brown it. Drain excess fat from the pan.
- Mix in the beans, Picante sauce, chili powder, and corn. Simmer to keep warm.
- Combine the soup, Rotel, and green chilis in a medium bowl.
- Lightly grease a 9 x 13-inch baking dish.
- Make layers in the baking dish, repeating until the dish is full. Usually, this will make two sets of layers so that you can add half of the ingredients to each layer.
- Nacho chips
- Beef mixture
- Soup mixture
- Mexican shredded cheese mix
- Put in the microwave uncovered for about 12 minutes until the contents are heated and the cheese melts.
- Top the casserole with the diced avocado.
- Serve with a dollop of sour cream and extra nacho chips as desired. This dish also pairs well with a light salad.
