Fresh and Easy Chicken Primavera

When the seasons change and the local gardens start blooming, there’s nothing we love more than a fresh and easy chicken primavera. This dish celebrates fresh ingredients with a rainbow of crisp vegetables, paired with tender, locally sourced chicken. It’s a delicious way to bring a taste of the Rogue Valley to your table any night of the week.

How Do You Make the Best Chicken Primavera?

The secret to a perfect chicken primavera is using high-quality, fresh chicken and cooking your vegetables just until they’re crisp-tender to maintain their bright color and nutrients. Deglazing the pan with a little local white wine or chicken stock creates a light, flavorful sauce that ties the whole dish together.

The Butcher Shop’s Favorite Chicken Primavera

Ingredients:

  • 1 lb TBS chicken breast, cut into bite-sized pieces
  • 12 oz dry pasta (penne or fusilli work great)
  • 2 cups seasonal vegetables (we recommend asparagus, bell peppers, and zucchini)
  • 2 cloves garlic, minced
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 cup chicken stock or white wine
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

1. Boil the Pasta
Bring a large pot of salted water to a boil, then cook the pasta to al dente according to the package directions. Drain and set aside.

2. Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through. Remove the chicken from the pan and set it aside.

3. Sauté the Vegetables
In the same skillet, add the fresh vegetables. Sauté for 3-5 minutes until they are bright and crisp-tender. Add the garlic in the last minute of cooking.

4. Deglaze and Simmer
Pour in the chicken stock or wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.

5. Toss Together
Add the cooked pasta and chicken back into the skillet. Toss with Parmesan cheese until everything is well-coated and heated through.

6. Garnish and Serve
Garnish with fresh parsley and extra cheese if desired. Serve hot.
