Pulled Pork Baked Potatoes

Baked potatoes are peak comfort food – especially when they’re fully loaded with gooey cheese, cool sour cream, and smoky pulled pork from The Butcher Shop. Perfectly seasoned and cooked low and slow, TBS pulled pork turns a simple baked potato into a restaurant-worthy dish with almost no extra effort on your part. Recipe for Pulled Pork Baked Potatoes

Ingredients:

  • 4 large russet potatoes (about 8–10 oz each)
  • 2 cups TBS pulled pork (any flavor)
  • ½ cup BBQ sauce (plus extra for drizzling)
  • 1 cup shredded cheddar cheese (or Monterey Jack)
  • ½ cup sour cream
  • 2 tablespoons unsalted butter (½ tbsp per potato)
  • 2 green onions, sliced
  • Salt and black pepper, to taste
  • Optional toppings: pickled jalapeños, crispy bacon bits

Directions:

1. Bake the Potatoes
Preheat the oven to 400°F (200°C). Scrub and dry the potatoes, then pierce each one several times with a fork. Rub each potato lightly with olive oil and sprinkle with salt. Place directly on the oven rack (with a baking sheet underneath) and bake for 50-60 minutes, until the skins are crisp and the potatoes are fork-tender.

2. Warm the Pulled Pork
In a medium saucepan or skillet, heat the 2 cups of pulled pork over medium heat. Stir in ½ cup of BBQ sauce and cook until heated through, about 5 minutes. Add a splash of broth or water if it seems dry.

3. Assemble the Potatoes
Cut a lengthwise slit in each baked potato and gently fluff the inside with a fork. Add ½ tablespoon of butter into each potato. Divide the pulled pork evenly among the four potatoes. Sprinkle each potato with ¼ cup of shredded cheese and let it melt into the hot filling.

4. Finish and Serve
Top with a dollop of sour cream and sliced green onions. Drizzle with extra BBQ sauce if desired and add any optional toppings like jalapeños or bacon.

Tips & Variations

  • Take a shortcut: Microwave the potato for 10-12 minutes (turning halfway), then crisp them in a 400°F oven for 10 minutes.
  • Try a Tex-Mex twist: Swap the cheddar for pepper jack and add jalapeños and Pico de Gallo.
  • Serve BBQ platter style: Serve the potatoes with coleslaw on top or on the side for crunch and tang.
