French Onion Pork Chops

Why should French onion soup’s rich, savory flavors be confined to soup? French onion pork chops are just as cozy and satisfying – and even easier to prepare. Juicy, tender pork is cooked with caramelized onions, a touch of wine, and melty cheese for a meal that feels restaurant-worthy, but is easy enough to pull together on a busy weeknight. And since it all cooks in one pan, clean-up is perfect for a weeknight.

Recipe for French Onion Pork Chops

Ingredients:

  • 4 thick-cut pork chops (bone-in or boneless)
  • 2 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • ½ cup dry white wine (optional, can substitute chicken broth)
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • Salt & pepper, to taste
  • 4 slices Gruyère or Swiss cheese
  • 2 tbsp flour (for thickening, optional)

Directions:

1. Prepare the Pork
Pat the pork chops dry and season both sides generously with salt and pepper.

2. Caramelize the Onions
In a large skillet, heat the butter and olive oil over medium-low heat. Add the sliced onions and cook slowly for 25–30 minutes, stirring occasionally until golden brown and caramelized. Add the garlic and thyme, cooking for another minute.

3. Deglaze the Pan
Pour in the white wine (or broth) to deglaze the pan, scraping up any browned bits. Stir in the beef broth and Worcestershire sauce. Simmer for 5 minutes. If you prefer a thicker sauce, whisk in the flour and cook for 2–3 minutes until slightly thickened.

4. Cook the Pork
Push the onions to the side of the skillet and add the pork chops. Sear for 3–4 minutes per side until browned and cooked through (internal temperature 145°F).

5. Top with Cheese
Nestle the pork chops into the onion mixture. Place a slice of Gruyère or Swiss cheese on each chop, cover the skillet, and let the cheese melt for 2–3 minutes.

6. Serve
Spoon the onions and sauce over the chops and serve hot with mashed potatoes, rice, or crusty bread to soak up every last drop.

Tips & Variations

  • Go Slow: Don’t rush the onions. Cooking them low and slow ensures a deep, sweet flavor.
  • Add Mushrooms: Toss in sliced mushrooms while caramelizing the onions for extra depth.
  • Use a Thermometer: Pork can dry out quickly if overcooked. Aim for an internal temperature of 145°F for tender, juicy results.
