Tuscan Chicken Thighs

Just because you can have dinner on the table in 30 minutes doesn’t mean it can’t feel like a gourmet meal. With juicy, tender chicken smothered in a rich garlic-Parmesan cream sauce with sun-dried tomatoes and spinach, these Tuscan chicken thighs are a restaurant-quality dish made simple. The boneless thighs cook in 30 minutes, while the sun-dried tomatoes and garlic bring a depth and zing to make this an irresistible one-pan meal that’s sure to become a new favorite.

Recipe for Tuscan Chicken Thighs

Ingredients:

  • 1½ pounds TBS boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ cup oil-packed sun-dried tomatoes, drained and chopped
  • ¾ cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)

Directions:

1. Prep and Sear the Chicken
Pat the chicken thighs dry and season both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the thighs to the pan and cook for 4-5 minutes per side, until golden brown and just cooked through. Remove and set aside.

2. Make the Sauce
In the same pan, saute the garlic for 30 seconds until fragrant. Stir in the Italian seasoning, red pepper flakes (if using), and sun-dried tomatoes. Cook for 1 minute. Add the chicken broth and use a wooden spoon to scrape up browned bits from the pan. Stir in the cream and Parmesan. Simmer for 2-3 minutes, until slightly thickened.

3. Combine and Finish
Add the spinach and stir until wilted. Return the chicken thighs to the skillet and spoon the sauce over the top. Simmer for 3-4 minutes to let the flavors meld.

4. Serve
Garnish with fresh herbs and serve hot over pasta or rice.

Tips & Variations

  • Make it dairy-free: Swap in coconut cream and a dairy-free Parmesan cheese.
  • Lighten it up: Use half-and-half instead of heavy cream and go easy on the cheese.
  • Make it keto: Serve with cauliflower rice or roasted veggies.
