Easy Cod and Summer Squash Foil Packets

When summer hits, light, healthy meals that don’t heat up the kitchen sound better than ever. These easy cod and summer squash foil packets fit the bill perfectly. Easily customizable, they’re packed full of protein and let you take full advantage of fresh, seasonal produce. Plus, cleanup is a breeze – just toss the foil! Whether cooking at home or over a campfire, cod and summer squash foil packets are the ultimate summer meal.

Recipe for Cod and Summer Squash Foil Packets

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 2 small yellow squash, thinly sliced
  • 2 small zucchini, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 4 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme, parsley, or dill)
  • Optional: red pepper flakes or a splash of white wine for extra flavor

Directions:

1. Prep the Packets
Preheat your grill to medium-high or your oven to 400°F. Tear off four large sheets of heavy-duty aluminum foil (about 12-14 inches long) and lay them flat on a clean surface.

2. Layer the Veggies
Divide the zucchini, yellow squash, and red onion slices evenly among the four pieces of foil. Drizzle with olive oil and season with salt and pepper.

3. Add the Cod
Place one cod fillet on top of each veggie bed. Drizzle with more olive oil, then top each fillet with minced garlic, lemon slices, and fresh herbs.

4. Seal the Packets
Fold the foil up and around the contents to create a sealed packet. Make sure the seams are tight so steam doesn’t escape.

5. Cook the Packets
If grilling, place the packets on the grill and cook for 12-15 minutes. If baking in the oven, place the packets directly on the oven rack or a baking sheet and cook for 15-18 minutes. The fish is done when it’s opaque and flakes easily with a fork.

6. Serve
Carefully open the packets and serve as-is for a rustic presentation, or plate it alongside couscous, quinoa, or crusty bread.

Tips & Variations

  • Add cherry tomatoes for a pop of color and sweetness.
  • Swap the cod for salmon or halibut.
  • Use parchment paper instead of foil (just keep it away from open flames if grilling).
