Pulled Pork Quesadillas

As the school year winds down, your calendar fills up with end-of-year concerts, final projects, sports banquets, and graduation parties. Between all the dropoffs, pickups, and last-minute to-dos, you still have to get dinner on the table. That’s where pulled pork quesadillas come in. Quick, hearty, and kid-approved, this easy meal is a reliable go-to when you’re short on time. Made with our TBS pulled pork and a handful of pantry ingredients, you can have dinner on the table in under 20 minutes.

Recipe for Pulled Pork Quesadillas

Ingredients:

  • 2 cups TBS pulled pork (any flavor)
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or whatever is in your fridge)
  • 4 large flour tortillas
  • Butter or oil for grilling
  • Optional: sliced jalapenos, black beans, corn, sour cream, guacamole

Instructions:

1. Prep the Filling
Warm your pulled pork slightly in a skillet or microwave. This helps it distribute evenly and meld better with the cheese.

2. Assemble the Quesadillas
On half of each tortilla, layer a generous spoonful of pulled pork, a handful of cheese, and any add-ins you like. Fold the tortilla over to make a half-moon.

3. Cook Until Crispy
Heat a large skillet over medium heat with a touch of butter or oil. Place the folded tortillas in the skillet (you may need to do this in batches), and cook 2–3 minutes per side or until golden brown and the cheese is melted.

4. Slice and Serve
Cut into wedges and serve hot with your favorite dips.

Tips & Variations

  • Make ahead: Assemble the quesadillas in the morning, wrap in foil, and refrigerate. Heat and eat at dinnertime.
  • Keep it crispy: Cook low and slow to get the tortilla crispy without burning it before the cheese melts.
  • Mix cheese types: Combining sharp cheddar and gooey mozzarella gives you both flavor and meltability.
