- 1 lb TBS smoked ham hocks
- 1 lb dry black-eyed peas
- 2 tablespoons olive oil
- 1 large sweet onion, diced
- 2 tablespoons minced garlic
- 8 cups chicken broth
- 8 cups water
- 1 14.5-ounce can diced tomatoes
- 5 pepperoncini peppers
- 1 bay leaf
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Directions:
- Begin by preparing your beans the night before. Place the beans in a large container and cover with several inches of water. Allow them to soak for at least 8 hours. Drain and rinse the beans.
