Few dishes evoke the feeling of a holiday celebration like a perfectly cooked prime rib. Rich, juicy, and bursting with flavor, this centerpiece dish is a true showstopper. It also pairs beautifully with a variety of sides, sauces, and wines, making it a prime choice for your holiday table. If the thought of making prime rib at home seems intimidating, don’t worry – this recipe breaks it down into easy-to-follow steps so you can bring a little luxury to your holiday feast.
Recipe for Holiday Prime Rib
Ingredients:
- 1 bone-in TBS prime rib roast (5-6 lbs, feeds 6-8 people)
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp kosher salt
- 1 tbsp freshly ground black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp Dijon mustard
Instructions:
1. Prepare the Prime Rib
Take the roast out of the refrigerator about 2 hours before cooking to bring it to room temperature. Pat dry with paper towels.
2. Make the Garlic Herb Rub
In a small bowl, mix the garlic, olive oil, salt, pepper, rosemary, thyme, and Dijon mustard to create a paste.
3. Season the Roast
Rub the garlic herb mixture generously over the roast, ensuring it’s well-coated on all sides. For extra flavor, push some of the rub into any crevices in the meat.
4. Preheat and Sear
Preheat your oven to 450°F (232°C). Place the prime rib on a rack in the roasting pan, bone side down. Roast at 450°F for 20 minutes to create a flavorful crust.
5. Slow Roast
Lower the oven temperature to 325°F (163°C). Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches:
- 120°F (49°C) for rare
- 130°F (54°C) for medium-rare
- 140°F (60°C) for medium
Use a meat thermometer to check the temperature in the thickest part of the meat, avoiding the bone.
6. Rest the Roast
Remove the prime rib from the oven, tent it loosely with aluminum foil, and let it rest for 20-30 minutes.
Tips & Tricks
- Choose the Right Cut: Look for a prime rib roast with good marbling for maximum flavor.
- Don’t Skip Resting: Resting ensures the meat is as juicy as possible.
- Serving: Serve with classic sides like mashed potatoes, sautéed green beans, or a fresh horseradish cream sauce.
