Recipe for Leftover Turkey Stir Fry
Ingredients:
For the stir fry:
- 2–3 cups TBS turkey, shredded or chopped
- 2 tablespoons cooking oil (vegetable, canola, or sesame oil work well)
- 2 cups mixed vegetables (broccoli, bell peppers, snap peas, carrots, or any leftovers you have)
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced or grated
- 3 green onions, sliced (reserve some for garnish)
For the sauce:
- 3 tablespoons soy sauce (low sodium recommended)
- 1 tablespoon oyster sauce (optional for extra depth)
- 1 tablespoon hoisin sauce or honey
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 2 tablespoons water or chicken broth
Optional garnishes:
- Sesame seeds
- Sriracha or chili paste
- Fresh cilantro
Instructions:
1. Prep Your Ingredients
Make sure all your ingredients are chopped, measured, and ready to go. Stir-frying happens quickly, so you’ll want everything within arm’s reach.
2. Make the Sauce
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and water or broth. Adjust seasonings to taste, especially if you want it spicier.
3. Heat the Pan
Heat a wok or large skillet over medium-high heat. Add the cooking oil and heat until shimmering.
4. Cook Aromatics
Add the garlic and ginger to the pan. Stir for 30 seconds until fragrant, being careful not to burn them.
5. Add Vegetables
Toss in the mixed vegetables and stir fry for 2–3 minutes until slightly tender but still crisp. If using leftover cooked vegetables, reduce the cooking time to just heat them through.
6. Stir in the Turkey
Add the turkey to the pan and mix well with the vegetables. Stir fry for another 2 minutes to warm the turkey.
7. Pour the Sauce
Drizzle the prepared sauce over the turkey and vegetables. Stir to evenly coat the ingredients with the sauce. Cook for another 1–2 minutes or until the sauce slightly thickens.
8. Serve
Remove the pan from the heat and garnish with green onions, sesame seeds, or a drizzle of sriracha for some kick. Serve over steamed rice, noodles, or cauliflower rice for a low-carb option.
Tips & Variations
- Veggie Swap: Use whatever vegetables you have on hand. Cabbage, kale, or green beans work well.
- Protein Boost: Add a scrambled egg or a handful of roasted cashews for extra protein, texture, and flavor.
