Leftover Turkey Enchiladas

Soup and sandwiches aren’t the only way to put that leftover Thanksgiving turkey to work. These turkey enchiladas put a twist on Thanksgiving leftovers with the spicy, comforting flavors of classic Mexican cuisine. Packed with protein and easy to make, these enchiladas are the perfect way to put that leftover turkey to good use.

Recipe for Leftover Turkey Enchiladas

Ingredients:

  • 2 cups leftover TBS turkey, shredded
  • 1 cup shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • 1 cup enchilada sauce (store-bought or homemade)
  • 8-10 corn or flour tortillas
  • 1/2 cup diced onion
  • 1 can black beans, drained and rinsed (optional)
  • 1 small can of diced green chilies (optional for extra flavor)
  • Fresh cilantro, avocado, tomatoes, and sour cream for garnish

Instructions:

1. Preheat Your Oven
Preheat your oven to 375°F (190°C) and lightly grease a 9×13 baking dish to prevent the enchiladas from sticking.

2. Prepare the Filling
In a large bowl, combine the shredded turkey, 1/2 cup of shredded cheese, diced onion, black beans, green chilies, and ¼ cup of enchilada sauce.

3. Assemble the Enchiladas
Lay a tortilla flat and spoon a generous amount of the turkey filling down the center. Roll it up tightly, and place it seam-side down in the baking dish. Continue until all tortillas are filled and arranged in the dish.

4. Add the Sauce and Cheese
Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure each one is well-coated. Sprinkle the remaining shredded cheese over the top.

5. Bake
Place the dish in the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly. For a slightly crispy top, broil the enchiladas for an additional 2-3 minutes at the end.

6. Add Toppings
Once out of the oven, add your favorite toppings for a burst of freshness and flavor. Try chopped cilantro, sliced avocado, a dollop of sour cream, and diced tomatoes.

Tips & Variations

  • Freezing: Assemble the enchiladas, then wrap them tightly in foil before freezing. When you’re ready to eat, thaw in the fridge and bake as directed.
  • Sauce Choice: Use red or green enchilada sauce based on your preference.
  • Spice Level: Add a pinch of cayenne or use spicy green chilies for a bit of heat.
  • Serve with Sides: For a complete meal, serve with Mexican rice, a simple salad, or even tortilla chips with salsa.
