Ingredients for Sizzling Chicken Fajitas:

For the Chicken Marinade:

  • 1 1/2 lbs of boneless, skinless chicken breasts, thinly sliced
  • 3 tablespoons of olive oil
  • 2 tablespoons of lime juice
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper to taste

For the Fajitas:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons of olive oil
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for garnish)
  • Warm flour tortillas

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Guacamole
  • Salsa

Instructions:

1. Marinate the Chicken

In a large bowl, combine the olive oil, lime juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Add the sliced chicken to the bowl, ensuring each piece is well-coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

2. Prepare the Vegetables

While the chicken is marinating, slice the bell peppers and onion. Set aside.

3. Cook the Chicken

Heat a large skillet or cast-iron pan over medium-high heat. Add a tablespoon of olive oil to the pan. Once the oil is hot, add the marinated chicken. Cook for about 5-7 minutes, or until the chicken is cooked through and has a nice char. Remove the chicken from the pan and set aside.

4. Sauté the Vegetables

In the same pan, add another tablespoon of olive oil. Toss in the sliced bell peppers and onion. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly charred.

5. Combine and Sizzle

Add the sliced chicken back to the pan with the vegetables. Toss everything together and let it cook for another 2-3 minutes until everything is warmed through and sizzling.

6. Serve

Transfer the chicken and vegetables to a serving platter. Garnish with freshly chopped cilantro and lime wedges. Serve with warm flour tortillas and your favorite toppings like shredded cheese, sour cream, guacamole, and salsa.
