Recipe for Peach Pork Chops:

Ingredients:

For the Pork Chops:

  • 4 bone-in pork chops, about 1 inch thick
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

For the Peach Sauce:

  • 2 large ripe peaches, pitted and sliced
  • 1/4 cup honey
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 cup chicken broth
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Instructions:

1. Prepare the Pork Chops:

  • Preheat your grill or skillet over medium-high heat.
  • Season the pork chops generously with salt and pepper on both sides.
  • Drizzle olive oil over the pork chops and rub them with the garlic, thyme, and rosemary.

2. Cook the Pork Chops:

  • Place the pork chops on the preheated grill or skillet.
  • Cook for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C).
  • Remove the pork chops from the grill or skillet and let them rest.

3. Make the Peach Sauce:

  • In a medium saucepan, combine the honey, balsamic vinegar, Dijon mustard, and chicken broth. Bring to a simmer over medium heat.
  • Add the sliced peaches to the sauce and cook for about 5-7 minutes, until the peaches are soft and the sauce has thickened slightly.
  • Stir in the butter and season with salt and pepper to taste.

4. Serve:

  • Place the pork chops on a serving platter and spoon the peach sauce over the top.
  • Garnish with additional fresh thyme or rosemary as desired.
