Ingredients for Hot and Spicy Buffalo Chicken Dip
- 2 boneless, skinless TBS chicken breasts
- 4 cups of water
- 1 teaspoon salt
- 3/4 cup of your favorite hot pepper sauce
- 2 8-ounce packages of cream cheese, softened at room temperature
- 1 cup of your favorite ranch dressing
- 1 1/2 cups of Mexican cheese pre-shredded mix
- 6 stalks of celery, cut into 3-inch pieces for dipping
- 1 box of crackers for dipping (many people like the chicken-flavored ones with this dip)
Directions:
- Poach the chicken. Add the chicken to a large pot with enough water to fully cover the chicken (about 4 cups) and 1 teaspoon of salt. Bring the water to a boil. Once it begins to boil, cover the pot with a lid and turn it down to simmer. Check the chicken every 8 minutes until the internal temperature of the thickest part of the breasts reaches 165°F.
- Once the chicken has been poached, chop it into small pieces.
- In another pot, mix together the chicken and hot pepper sauce until the chicken is well coated. Cook over medium heat for about 3 minutes. Stir in the cream cheese and ranch dressing. Stir continuously and cook for about 5 minutes until it is warm.
- Pour half the shredded cheese mix into the pot and stir.
- Move the dip to a slow cooker on the low setting. Allow it to cook for about 35 minutes until it bubbles.
- Serve in the cooker with the celery sticks and crackers.
