Ingredients for Sea Scallops Pasta with Peas:
- 1 pound TBS scallops (small to medium)
- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 1 teaspoon red pepper flakes
- 3 cups chicken broth
- about 1/2 pound of spaghetti noodles
- 1 lemon, zest and juice
- 1 cup frozen peas, defrosted
- 1/4 cup flat leaf parsley. chopped
- salt and pepper, to taste
- More red pepper flakes for garnish, if desired
Directions:
1. Prepare the scallops. Pat them dry and then season them on all sides with salt and pepper.
2. Saute the scallops lightly. Heat a couple tablespoons of olive oil in a deep skillet over medium-high heat. Cook the scallops until each side is golden brown (about 1-2 minutes per side.) Remove and set aside.
3. Prepare the pasta. Add the remaining olive oil to the skillet and adjust the heat to medium. Add the garlic and red pepper flakes and saute for 30 seconds. Pour in the chicken stock and the uncooked pasta. Bring the chicken broth to a boil and then turn the temperature down to low. Cook covered for 8 minutes.
4. Put it all together. Remove the cover and simmer the noodles and allow the broth to reduce for about 5 minutes. If there is still excessive liquid, pour some out. Remove the noodles from the heat. Mix in the scallops, peas, juice and zest from the lemon, and parsley. Add additional salt and pepper to taste.
5. Serve immediately. Garnish with a light sprinkling of red pepper flakes if desired.
