Grilled Chicken Lettuce Wraps

Looking for a quick, nutritious meal that the whole family will love? These Grilled Chicken Lettuce Wraps are perfect for a refreshing spring lunch or dinner. Juicy, marinated chicken tenders paired with a vibrant mix of fresh vegetables and a tangy peanut sauce make for a delightful, healthy dish. Easy to prepare and bursting with flavor, these wraps are ideal for busy weeknights or casual gatherings, bringing a light yet satisfying option to your table.

Ingredients for Grilled Chicken Lettuce Wraps

  • 2 lbs TBS boneless skinless chicken tenders (raw)
  • 1 lime, juiced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon kosher salt
  • 2 small heads of butter lettuce

Vegetable Filling

You can be as creative as you want with the vegetables for your Chicken Lettuce Wraps. Here are our suggestions:

  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 carrots, grated
  • 1/2 cup purple cabbage, thinly sliced

Peanut Sauce

  • 1/2 cup crunchy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 lime, juiced
  • 1 teaspoon sriracha
  • 1/2 teaspoon ground ginger
  • 2 tablespoons water

Directions:

  1. Prepare the marinade by whisking together the lime juice, soy sauce, honey, rice vinegar, and salt in a small bowl. Mix in the basil and pour into a large resealable plastic bag. Add in the chicken and marinade and refrigerate for at least 3 hours.
  2. While you’re waiting, prepare the vegetables. Chop all the vegetables for the filling and place them in a bowl in the refrigerator until you’re ready to assemble your wraps.
  3. Make the peanut sauce. Whisk together the peanut butter, soy sauce, brown sugar, lime juice, sriracha, ground ginger, and water. Place in the refrigerator.
  4. When you’re ready, heat up the grill! Grill the chicken over high heat for 2-3 minutes per side. The internal temperature of the meat should reach 165F.
  5. Assemble your wraps. Layer chicken topped with veggies on butter lettuce leaves. Drizzle with peanut sauce. Serve immediately.
