Ingredients for Chicken Soup with Barley:
- 2 pounds of TBS chicken thighs
- 3 carrots, chopped
- 3 celery stalks, chopped
- 1 medium sweet onion, chopped
- 3/4 cup pearl barley
- 3 bay leaves
- 8 cups low-sodium chicken broth
- 1 teaspoon poultry seasoning
- 1 teaspoon rubbed sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lemon juice
Directions:
- Use a large stock pot over medium heat. Combine the broth, chicken thighs, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 30 minutes until chicken is tender.
- Remove the chicken and set aside to cool. Turn the heat to the broth off. Remove the meat from the bones and discard the bones, skin, and fat. Cut the meat into 3/4-inch pieces.
- When the broth has cooled enough that the fat congeals on the surface, skim off the fat and discard it.
- Add the chicken, carrots, celery, onion, pearl barley, bay leaves, poultry seasoning, sage, salt, and pepper to the broth. Bring the soup to a boil.
- Reduce the temperature to low, cover the pot, and simmer the soup for about 90 minutes until the barley is cooked and the vegetables are tender.
- Stir in the lemon juice right before serving it.
