Ingredients for Mexican Fiesta Lasagna
- 1 pound TBS ground beef
- 1 small sweet onion, chopped
- 1 tablespoon olive oil
- 1 16-oz can refried beans
- 1 16-oz can mild chili beans, undrained
- 1 14.5-oz can Rotel tomatoes, drained of excess liquid
- 1 16-oz or smaller can of sweet corn
- 1 cup salsa
- 1 4-oz can of diced green chiles, mild
- 1 envelope of reduced-sodium taco seasoning
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 3 cups Mexican cheese pre-shredded mix
- 1 cup cottage cheese
- 1-1/4 cups sour cream, divided
- 9 lasagna noodles, prepared to package directions
Directions
- Cook the lasagna noodles according to package directions and set aside.
- Preheat your oven to 350F.
- In a deep skillet, saute the onion with the olive oil over medium heat until it begins to soften. Add the ground beef and brown until no longer pink.
- Stir in the beans, tomatoes, salsa, corn, green chilies, and seasonings. Turn heat to medium-low and allow to cook. Stir occasionally.
- Mix the cottage cheese, 3/4 cup of sour cream, and 1 cup of shredded cheese in a large bowl.
- Construct the lasagna:
- Spread about one cup of the meat sauce into a greased deep baking dish.
- Layer with three noodles.
- Cover with about a third of the cottage cheese mixture.
- Add about a third of the meat sauce.
- Repeat until you’ve used all of your meat sauce and cottage cheese mixture.
- Cover with foil and bake at 350F for 1 hour.
- Remove from the oven. Spread the remaining sour cream on the top and sprinkle with the remaining shredded cheese. Return it to the oven and bake for another 10-12 minutes until the cheese is melted.
- Remove from the oven and allow the lasagna to stand for about 10-15 minutes before serving.
- Top with additional favorites as you choose, like sliced olives, green onions, etc.
