Ingredients for Low Carb Chili:
- 1 1/2 pounds of TBS ground beef
- 2 tablespoons olive oil
- 1 medium sweet onion, chopped
- 1 green or red pepper, seeded and chopped
- 1 tablespoon minced garlic
- 1 small can of diced green chilis, drained
- 1 15.5-ounce can of low-sodium kidney beans, drained and rinsed
- 1 15-ounce can of cannellini beans, drained and rinsed
- 1 14.5-ounce can of no-salt diced tomatoes
- 1 6-ounce can of low-sodium tomato paste
- 1 cup of low-sodium beef broth
- 2 tablespoons chili powder
- 2 teaspoons ground oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- Cheddar cheese, grated, for topping
Directions:
- Add the spices into a small dish and set aside: chili powder, oregano, cumin, salt, and pepper.
- Saute the onion and green pepper using olive oil in a deep skillet over medium heat. When the onion begins to soften, add the green chilis and garlic. Continue to saute for 1-2 minutes until the garlic is fragrant.
- Add the ground beef and cook until browned.
- Add the remaining ingredients, including the spices, stir well, and heat to a boil.
