Ingredients for Ground Beef Risotto
- 1 lb TBS ground beef (80/20 works well)
- 1 sweet onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1/4 teaspoon black pepper
- 1 cup uncooked Arborio rice
- 3 1/2 cups beef broth
- 2 carrots, shredded
- 1/2 cup fresh Parmesan cheese (shredded)
- 1/4 cup of chopped fresh chives or green onions
Directions:
- Saute the onion using olive oil in a deep skillet over medium heat. As soon as the onions begin to soften, add the ground beef, garlic, and pepper. Cook until the ground beef is no longer pink. Drain the excess fat from the skillet.
- Stir in the Arborio rice. Cook for 2 minutes, stirring continuously.
- Add in the beef broth and heat until it begins to boil.
- Reduce the heat to medium-low. Cover the skillet and allow it to simmer for 10 minutes.
- Add in the carrots and stir. Cook uncovered for 5 to 7 minutes until all the broth is absorbed into the rice.
- Remove the skillet from the heat and add in the cheese. Stir to mix well. Cover the skillet and allow it to sit for 3 minutes before serving.
- Serve with a garnish of chives or green onions.
Note: If desired, you can use long-grain white rice instead of Arborio rice. The texture will be very different, however. Arborio rice will give you a smooth, creamy texture, while white rice will be drier and more segmented.
