Ingredients for turkey taco lettuce wraps:

  • 1 pound TBS ground turkey
  • 2 tablespoons olive oil
  • 1 bag frozen corn
  • 1 can black beans, rinsed and drained
  • 1 package pico de gallo
  • 1 cup Monterey jack cheese, shredded
  • 1 package taco seasoning mix
  • 6 romaine leaves, or as needed, rinsed and dried
  • Optional: your favorite hot sauce or taco sauce

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the ground turkey and brown it for 5-7 minutes. It should become brown and crumbly.
  2. Add the taco seasoning, stir, and cook for about one minute.
  3. Add the corn, black beans, and pico de gallo. Bring to a simmer. Cook for about 10 minutes until everything is heated through.
  4. Wash and dry the romaine leaves. Place leaves on dishes. Top each leaf with a scoop of the taco meat and sprinkle with the shredded cheese. Add a dash of hot sauce or taco sauce if desired.
