Ingredients for Cheeseburger Soup:
- 1 pound TBS lean ground beef
- 2 tablespoons olive oil
- 1 medium sweet onion, chopped
- 2 to 3 carrots, shredded
- 2 stalks of celery, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 cups Yukon gold potatoes, cubed
- 4 cups chicken broth
- 3 tablespoons of butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 2 cups medium or sharp cheddar cheese, cubed
- 1/4 cup sour cream
- Optional garnishes: chopped green onions, bacon bits, and diced fresh tomatoes
Directions:
- Use a large soup pot or Dutch oven over medium heat. Add the olive oil to the heated pot and saute the onions, carrots, and celery until they just start getting soft (1-2 minutes). Add the ground beef and brown the meat until the pink is gone (about 5 minutes).
- Mix in the basil and parsley, then add the potatoes and broth. Bring the soup to a boil and then reduce to low. Simmer until the potatoes become tender (about 12 minutes.)
- Melt the butter in a small saucepan over medium heat. Add the flour in, a little at a time, and whisk continuously for one minute until smooth. Add the milk gradually while whisking. Turn the burner to simmer and stir until the sauce thickens and becomes smooth.
- Slowly add the sauce to the soup while constantly stirring. Bring the soup to a boil.
- Reduce the temperature to low and add the cheese. Stir until the cheese melts.
- Stir in the sour cream.
