Ingredients for Bacon Wrapped Meatloaf
- 2 lbs TBS ground beef
- 1 medium sweet onion, diced
- 1 red bell pepper, diced
- 1 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 2 eggs
- 3/4 cup rolled oats (quick or old fashioned)
- 1 teaspoon salt
- 1 teaspoon black pepper
- About 12 strips of thick bacon
- 1/2 cup barbeque sauce
Directions:

Preheat oven to 350° F.

Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon. The bacon should hang out the sides of the pan.

Mix together the ground beef, onions, bell pepper, garlic, ketchup, Worcestershire sauce, eggs, oats, salt, and pepper in a large bowl.
- Brush about 2 tablespoons of the barbeque sauce over the bacon in the loaf pan.
- Add the meat mixture to the loaf pan. Press the meat firmly to fill the pan.
- Fold the ends of the bacon over the top of the loaf pan.
- Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Add additional strips of bacon to cover the ends of the meatloaf. Make sure the bacon is tucked in well under the meatloaf on all sides.
- Place the meatloaf in the oven and bake it for 50 minutes.
- Remove the meatloaf and brush it with the remaining barbeque sauce. Return it to the oven for another 15 minutes. Check its internal temperature. It’s done when the center reaches 165° F.
- Let the meatloaf rest for 15 minutes before slicing it.
- Serve with additional barbeque sauce if desired.
