Ingredients for Cheeseburger Soup:
- One pound of TBS ground beef
- 1 medium to large-sized sweet onion, chopped
- 4 carrots, chopped
- 3 stalks of celery, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 tablespoons of unsalted butter (divided)
- 3 cups chicken broth
- 4 cups yellow potatoes, diced
- 1/4 cup all-purpose flour
- 3 cups of Velveeta cheese, cubed
- 1 1/2 cups whole milk
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup sour cream
- Optional toppings: green onions, onion rings, chopped tomatoes, bacon crumbles…whatever you like on a burger!
Directions:
- Start by heating a large saucepan over medium heat. Add the ground beef and cook until it’s no longer pink, breaking it up as you go. This should take around 6-8 minutes. Once cooked, drain the beef and set it aside.
- In the same saucepan, melt one tablespoon of butter over medium heat. Add the onion, carrots, celery, basil, and parsley, and sauté until the vegetables are tender, which should take about 10 minutes.
- Next, add the cooked beef back into the pan along with the potatoes and broth. Bring the mixture to a boil, then reduce the heat to a simmer and cover the pan. Allow the soup to cook for another 10-12 minutes or until the potatoes are tender and the flavors have melded together.
